P.D.O.& P.G.I
P.D.O./D.O.P. (Protected Designation of Origin / Denominazione d’Origine
Protetta) is defined by the European Union and is connected with the
specific geographical area that defines the quality, taste and other singular
characteristics. P.D.O. refers to olive oils that are produced, processed and
prepared in a specific region using traditional production methods. The raw
materials must also be from the defined area whose name the product
bears.
What is P.G.I.?
P.G.I refers to olive oils that are produced in the geographical region whose
name it bears. The geographical link must occur in at least one stage of
production, processing or preparation. It is sufficient for only one of the
stages of production to have taken place in the defined area; for instance,
the raw materials may come from another region. This allows for a more
flexible link to the region and can focus on a specific quality, reputation or
other characteristic attributable to that geographical origin.
What does P.D.O. and P.G.I guarantee?
That the olive oil is produced in a specific geographic area.
That the olive oil is pressed from a specific variety of olives cultivated in
that area.
The quality and organoleptic characteristics of olive oil depend on the
climate and the soil.
That the olive oil is pressed at less than 27oC.
That each bottle is numbered in accordance with a strictly monitored
procedure.
P.D.O. can only be an extra virgin olive oil of superior quality.
